- Continental Veg Sandwich
Feeling hungry and have nothing exciting to eat. Here is a quick and easy snack that not only you but your kids too will love to eat.
You will need Capsicums of a different color, to begin with; shredded form as per the number of servings you want to prepare. The below list will be enough to make 4 sandwiches.
- 2 Tbsp shredded Red Capsicum,
- 2 Tbsp shredded Yellow Capsicum,
- 2 Tbsp shredded Green Capsicum,
- 2 Tbsp shredded Cabbage,
- 2 Tbsp Cheese,
- 1 Tbsp Coriander or Parsley
- 2 Tbsp shredded Onion,
- 1 Tbsp Chilli Flakes,
- 1 tsp Oregano,
- Salt to taste,
- Pizza Sauce & Butter as required.
Take a bowl as per the servings you want to prepare. Put the shredded capsicums, cheese, onions, cabbage, coriander, or parsley. Add salt, oregano, and chilly flakes and mix it well.
Next, take the bread slices and spread the pizza sauce on all the slices, and put a good amount of mixture on the bread. Add some more cheese if you want to. Put the second slice of bread to make a sandwich and apply butter on both sides of the bread. Grill the sandwich for 2-3 minutes till the bread turns brown. You can again sprinkle some cheese and coriander on the top before serving.
Enjoy this finger-licking sandwich with some ketchup or a cheese dip if you are a cheese lover and not on diet. Gets prepared in around 10 minutes provided you have all the ingredients at home. Since it is made of vegetables it is healthy to eat and you can also use brown or whole wheat or multi-grain bread to make it more nutritious for yourself and the kids as well. You can do further variations by adding different vegetables and increase nutritional value.
